FOR THE FOODIE: AN INTRODUCTION

Fifteen-year-old me was watching The Real Housewives of Atlanta when she felt a lump in her neck. After months and months of hospital appointments, it was determined that that lump was a tumour the size of an egg sitting on my thyroid.

* Yes, I am in fact expecting you to gag while reading this. It's nasty. *

After getting over three quarters of my thyroid removed, I started noticing that I couldn't keep my food down, and I couldn't ever go a day without stomach pains, migraines or mood swings. After another year of hospital visits and procedures, doctors determined that my new hormone levels had triggered celiac disease, an auto-immune disease, that in my case was hereditary, that prohibits someone from eating wheat, oats, rye, malt, and barley. 

Needless to say, I can't eat what I used to eat. I've had celiac for almost five years now, and I'm finally getting the hang of making and finding foods that are just as delicious as what I had grown accustomed to eating pre-celiac. 

I've decided to use this portion of this space to share with you some recipes and restaurants that cater to those with dietary restrictions. Dig in, y'all.
