SPICY CHICKEN WITH LEMON RICE
Okay, so since tumeric is all the rage, why not share a meal that features a crap ton of turmeric?!
At my local tea shop, we serve a tea called 'tumeric glow', which all of our customers are obsessed with, and swear by. Tumeric is one of the most useful brian-boosting nutrients, known for it's ability to improve memory, and cognition.
Preparation time: 20 minutes
Cooking time: 40 - 45 minutes
Serves 4
Chicken --
2 garlic cloves, minced
1/3 cup of plain yogurt (i used dairy free yogurt)
1 teaspoon of paprika
1 teaspoon of ground cumin
1 teaspoon of ground tumeric
1/2 teaspoon of gouger cinnamon
grated zest and juice of 1 lime
2 tablespoons of tomato paste
1 tablespoon of olive oil, and extra for brushing
4 (8 oz) boneless chicken breasts
Lemon Rice --
2 1/4 cups of brown rice
2 tablespoons of butter
1 onion, diced
1 teaspoon of ground tumeric
grated zest and juice of 1 lemon
sea salt and black pepper
How To --
mix the garlic, yogurt, paprika, cumin, tumeric, cinnamon, lime juice, tomato paste &olive oil
add the chicken, stir to coat, and let it marinate for 20 minutes
meanwhile, cook brown rice in a saucepan of lightly salted boiling water until tender
melt the butter in a large saucepan, add the onion, cook on low for 5 - 8 minutes
stir in the tumeric, lemon zest and juice and cooked rice
season and cook for 3 - 5 minutes
heat a skillet over high heat, and brush with some olive oil
place coated chicken in the pan and cook for 3-4 minutes on each side until cooked
